Abstract
This research work aimed to evaluate and compare the fresh wild fig with sun dried and oven dried in phytochemical attributes.Before drying, fig samples were analyzed for their physicochemical parameters such as; pH, total soluble solids, moisture content, Titratable acidity, ascorbic acid, total ash content, total sugars, reducing sugars and non-reducing sugars content. The above same contents were also determined after sun drying and oven drying. Antioxidant activity was evaluated using DPPH assay and fresh fig fruits found value is as 21 AAE 100 g DM, in sun dried fruits 26 AAE 100 g DM and in oven dried samples 30 AAE 100 g DM. Results revealed that oven dried figs have more antioxidant value. Total phenolic contents in fresh fruit were 60 Mg GAE 100 g DM, in sun dried figs were 100 Mg GAE 100 g DM, whereas oven dried 115 Mg GAE 100 g DM. From these results it is concluded that drying methods does not affect physicochemical characteristics of wild fig. These both drying methods are equally recommended for fig drying, however oven drying comparatively better than sun drying
