MEDICINAL PLANT-BASED INNOVATION: UTILIZATION OF ZIZIPHUS MAURITIANA EXTRACT AS A FUNCTIONAL INGREDIENT IN BREAD MANUFACTURING

Abstract
Ziziphus mauritiana a medicinal plant from the Rhamnaceae family, is widely used in herbal medicine due to its bioactive compounds. This study aimed to evaluate the potential of Z. mauritiana extract in bread manufacturing. Mature and fresh leaves were dried at 60°C, and ethanolic extraction was performed. The extract was then incorporated into bread formulations at different concentrations (T0: control, T1, T2, T3, and T4). The resulting bread samples underwent sensory and quality assessments. The findings revealed significant improvements (P<0.05) in external and internal bread attributes, with treatment T3 showing the most favorable results. Moreover, the extract exhibited no adverse effects on health markers in experimental animals, indicating its safety for food applications. The study concludes that Z. mauritiana extract can be utilized as a functional ingredient in bakery products without detrimental effects.
