EFFECT OF CHITOSAN AND ALOE VERA GEL ON THE QUALITY OF FRESH GRANNY SMITH APPLES SELECTED FROM DISTRICT ZIARAT, BALOCHISTAN

Abstract
The investigation explores the influence of chitosan and aloe vera gel coatings on the quality of fresh Granny Smith apples sourced from District Ziarat, Balochistan. Various parameters, including moisture content, water activity, pH, acidity, total soluble solids (TSS), juice content, ascorbic acid, and titratable acidity, were assessed. Results indicate a decrease in moisture content, acidity, ascorbic acid, and water activity, while pH and TSS levels increased with the application of coatings. Notably, treatment T4 demonstrated superior effects among all treatments, suggesting the potential of chitosan and aloe vera gel coatings in enhancing the shelf life and quality of Granny Smith apples from District Ziarat, Balochistan
