ANALYSIS OF QUALITY CHARACTERISTICS OF LOCAL LINE PEPPER IN DIFFERENT REGIONS OF GUIZHOU

Abstract


In this study, partial product, nutritional and flavor quality characteristics of 22 local line pepper from different regions in Guizhou were analyzed. The results showed that the fruit shape index ranged from 11.38 to 38.71, the thickness of fruit flesh was within 2.85-1.13 mm, the single fruit weight was 5.87-16.15 g, the dry matter content ranged from 18.75% to 34.55%, and the total capsaicin-like substances was between 0.00-2.38 g.kg-1. The coefficient of variation of the total capsaicin-like substances was 104.83%, and local line pepper in Guizhou had a significant difference in pungency degree. The averages of transverse fruit diameter, fruit flesh thickness and single fruit weight was Anshun > Tongren > Qiannan > Bijie. The average vertical fruit diameter was Anshun > Tongren > Bijie > Qiannan. The average fruit shape index was Bijie > Anshun > Tongren > Qiannan. The averages of dry matter content, capsaicin content, dihydrocapsaicin content and total capsaicin-like substances were Tongren > Qiannan > Bijie > Anshun. The quality analysis of local line pepper in Guizhou was conducted to provide intuitive regional identification data for local pepper, enhance its public awareness, as well as provide a scientific basis for its product development, resource creation and utilization, and gene mining for quality traits.
