EVALUATION OF PHYSICOCHEMICAL AND ANTIMICROBIAL PROPERTIES OF ACACIA HONEY OF PAKISTAN

Abstract


This study was conducted to investigate the acacia honey properties and quality in Pakistan and mark its export potential. Acacia honey samples were collected from different honeybee farms and were subjected to sensory analysis on the field. Pollen analysis was carried out to check the botanical origin and purity of honey. Pure monofloral Acacia honey samples were further analyzed for physicochemical studies. Overall mean values of physicochemical analysis showed that Acacia honey has moisture 20.01%, pH 3.84, Electrical Conductivity 0.22 mS/cm, Acidity 19.55 meq/kg, Ash 0.045 % and HMF 29.93mg/kg. Overall results were all within the standard limit of PSQCA and Codex. Antimicrobial analysis showed that Acacia honey has good antimicrobial activity especially at higher concentrations against all 03 bacterial strains i.e Staphylococcus aureus, Salmonella typhimorium and Escherichia coli. This study will help in ensuring the authenticity of monofloral Acacia honey of Pakistan and also establishes its valuable properties for export purpose worldwide.
