BIOCHEMICAL INVESTIGATIONS OF DIFFERENT VARIETIES OF MALUS DOMESTICA, PSIDIUM GUAJAVA AND PUNICA GRANATUM

Abstract


The present investigation was carried out to find ascorbic acid content, titratable acidity, reducing sugar content, total soluble solids, antioxidant activities of three commercially available apple and guava varieties. While phytochemical constituents were find out in three commercial varieties of pomegranate. Overall, pink fleshed fresh guava, red and golden apples extract contained highest content of ascorbic acid with value of 1.05g/20g, 0.915g/20g and 1.412g/20g respectively. While tetra packed guava juice contained least amount and were absent in tetra pack apple juice. Tetra pack guava and red apple juice contained highest amount of titratable acidity 0.2% and 0.4%, respectively. Total soluble solids were least present in gola guava extract as 4.3˚Brix% age and were highest in red and green apple juices e.g., 10.5%.  Pink guava and red apple extract had highest amount of antioxidant activity measured by DPPH assay and lowest in tetra pack apple juice. Benedict’s test was used for reducing sugar amount and large amount of sugars was present in green apple juice. While lowest in red apples. ANOVA was performed with the help of Statistix 8.1. Phytochemicals constituents flavonoids, coumarine and tannins were present in high amount in bandana pomegranate. Saponins were present in low amount in red and white pomegranate. Terpenoids were rich in white pomegranate. Steroids, volatile oil, glycosides and quinone were absent in all varieties.
