PERFORMANCE EVALUATION OF SELECTED SOUTH PUNJAB GROWN BER (Ziziphus mauritiana) CULTIVARS UNDER LOW TEMPERATURE STORAGE

Abstract


Ber (Ziziphus mauritiana) also known as “Chinese date” or “jujube” belongs to Rhamnaceae family. The current study was designed to assess the effect of storage temperatures (5℃ and 15℃) on ascorbic acid content, reducing sugars content and titratable acidity of four Ber (Ziziphus mauritiana) varieties i.e . Fresh fruit was subjected to proximate analysis, reducing sugars content, titratable acidity, anti-oxidant activity and total phenolic content. Stored fruit was subjected to storage study at 0, 7th and 14th for comparative evaluation on the basis of titratable acidity, reducing sugars content and ascorbic acid content. Results showed that fruits stored at 5℃ showed maintained level of ascorbic acid content, reducing sugars and titratable acidity. Whereas fruits stored at 15℃ showed reduction in ascorbic acid content and titratable acidity and increase in reducing sugars content. It was concluded that cultivar showed best results at low storage temperatures i.e. 5°C.
