Abstract


Lemon-grass extracts (Cymbopogon citratus) belongs to a valuable family of grass known for its flavoring and fragrance applications. Nowadays, lemongrass oil is capturing the attention of food technologists due to its unique chemical history. The leaves and the essential oils are used to make different medicines and supplements. Lemongrass is commonly taken orally, when applied directly to the skin, and inhaled as aromatherapy for different conditions and used in different regions of the world. In order to freeze lemongrass, thinly sliced pieces or balls are stored in single layers in zipper-lock bags. The frozen lemon-grass extract can be minced, broken into pieces and can be used in purees as well. The health benefits of extracts provide a sense of relief from body organs that are damaged. It is also known for control of platelets composition. It can prevent CVD risk, respiratory infections, anxiety disorders, inability to sleep and imbalance of hormone levels. The anti-microbial properties can be served for natural food preservatives in future use. It claims to boost the immunity due to the presence of secondary metabolites. Lemon-grass extracts leads to the inhibition against various microbes that includes food-borne bacteria. It has a fresh, lemony scent with thin consistency and yellow color.
